My Lunch Packing Ritual

Packing lunch is a form of self-care for me and an investment that pays major dividends. Today, I share a peek into my weekly meal prep ritual with you. I hope it inspires you to pack your lunch as well!

The Recipe

INGREDIENTS

For Bowls:

  • Soba noodles
  • 4 vegetables of your choice - I picked whatever was in my fridge: snap peas, radishes, purple cabbage
  •  1 pack firm tofu

For Tofu Marinade:

  • 454 g extra firm tofu
  • 3 tbsp soy sauce
  • 2 ½ tbsp maple syrup
  • 1 tbsp balsamic vinegar
  • 1 ½ tsp liquid smoke
  • 2 tsp dijon mustard
  • 1 large clove of garlic - crushed

For Sesame Dressing:

  • ¼ cup rice vinegar
  • 2 tablespoons tamari, more for serving
  • ½ teaspoon toasted sesame oil
  • 1 teaspoon grated ginger
  • 1 garlic clove, grated
  • ½ teaspoon maple syrup or honey

STEPS

  • Boil soba noodles
  • Cut up tofu in small cubes and marinade in Smoky Tofu Marinade (see below)
  • Blanch snap peas, slice radishes, shred cabbage and carrots
  • Make sesame dressing
  • Divide amongst containers - I made enough for 3 lunches and 1 dinner
