Leftovers Deserve a Glow-Up

Let’s stop calling them “leftovers” and start calling them magical building blocks for your next mind-blowingly delicious lunch. (Can we think up one word for this? 😂) 

If you’re like me, eating the same thing two days in a row isn’t ideal. But reinventing yesterday’s dinner into something fresh? That’s where the magic happens.

For dinner, I usually lean toward a balanced plate: protein, veggies, salad, and a carb like rice, noodles, or potatoes. Lunch, however, is a whole different vibe. It’s lighter, easier, and often served in a bowl or one of our Meal Containers when I’m on the go. My go-to? Warm salad bowls. They’re hearty enough to fill me up but not so heavy that I want to lie down and take a nap after I eat one. 

Here’s the best part: with a little planning and the right ingredients, the possibilities are endless. Change up the dressings, bases, proteins, carbs, fruits, veggies, and toppings to create something new every day.

How I Meal Prep for Success

Here’s my Sunday routine, made simple with our planner:

  1. Take Stock: Check what’s already in my fridge, pantry, and freezer.

  2. Menu Plan: Use what I have and what I’m craving to sketch out a menu for the week.

  3. Grocery Shop: Pick up the missing ingredients.

  4. Pack Ahead: If I’m heading to the office, I pack my next day’s lunch right after dinner. If I’m working from home, I prep everything so it’s ready to assemble the next day.
