I take the time on the weekends to meal plan for lunches and dinners for the week and this allows me to maximize my time as I'll often use elements of a dinner recipe for multiple lunches as well. For example, this week I packed a grilled smoked tofu and baked oyster mushroom baguette for lunch, which also works as a dinner salad or side. Making 5 sandwiches at once takes a fraction of the time as making 5 sandwiches separately, and really frees up any question around what to eat for lunch during the week when things are busy.

Koshari is a classic Egyptian recipe of lentils, rice, chickpeas and pasta. It's usually topped with crispy onions and a vinegary tomato sauce. I love this recipe because it was a staple in my childhood and reminds me of my grandmother.

One of my go-to quick and easy lunches to make when I'm crunched for time is a Mediterranean Pasta Salad. It's packed with all my favorite things, cheese, olives and pasta! It takes me 20 mins to make and I'm out the door.

One of my favorite dishes is Chicken Katsu, a Japanese style chicken cutlet. This air fryer recipe makes it so easy to make at home and comes out juicy and tender on the inside, crispy and flaky on the outside! I pair it with some rice and veggies to make it a colorful bento box lunch!

These Chocolate Protein Cakes are super macro-friendly and filling. It is stuffed with oats, eggs, protein powder, milk, and banana so it replaces a heavy lunch meal. It’s easy to make, I can carry it everywhere I go and it tastes so delicious!

Bulgogi

I work from home so I rarely pack lunch to go but this is one that I'll pack for my boys and I if we're out for the day. I often pack it for my son's lunch too as there are always a bit of leftovers the day after we have it for dinner.
