Now that another school year has begun, it's the perfect time to add a new twist to some favourite after school snack recipes. Almond butter is an excellent source of protein and a great alternative to boring PB & J. Indeed it's hard to improve a classic, but we're simply loving these two creative and delicious meal ideas by Insta moms Joy Miles of @lunchesandlittles and Megan Powell of @hen_family. Check them out and let us know what you think! 1. Almond Butter and Strawberry Jelly Pinwheels with Veggie Smoothie by Joy Miles, @lunchesandlittles
For snacking, serve with banana, cheese crackers, prune plum and an assorted fruit cup (grapes, blueberries, pineapple and raspberries).
1. Flatten bread of choice with a rolling pin and cut into small strips (approx. 1 inch tall and as long as the piece of bread). I typically combine 2 strips to make the surface of the bread long enough/pinwheel large enough). 2. On strips, spread a small amount of almond butter and jelly. Then roll up each pinwheel and pinch at the end to seal. 3. Repeat until you have made enough pinwheels. For this meal I made 4 total.
Veggie Smoothie Recipe:
1. Combine 1/2 cup milk, 1/2 tablespoon honey, 1/2 cup frozen peas, 1/4 cup plain greek yogurt, 1 carrot and 2 strawberries in a blender 2. Blend until smooth. 3. Then pour into a food pouch, such as the silicone pouches from @squeasygear. About Joy: Joy is a mom of two littles, ages 1 1/2 and (almost!) 2 1/2. 2. Almond butter banana roll-ups with whole grain wraps by Megan Powell, @hen_family
These are great with almond butter, but you can also use any other kind of butter you prefer, such as peanut or cashew, or sunflower butter for a completely nut-free version.
1. Mix almond butter in a small bowl with the 1 tsp of honey. The size of the wrap may vary depend on the amount of butter you prefer to use. We used a 12 grain small wraps.
2. Slice banana into thin rounds.
3. Lay the wrap flat on a flat surface and spread the butter mixture evenly over the wrap so it covers almost the entire wrap.
4. Place the banana slices evenly on top of the butter mixture.
5. Start from one end and roll the wrap tightly up as if you were rolling a sushi roll. You might need to add a bit of almond butter on the edge of the wrap to ensure it holds completely together.
6. Cut the wrap into rounds (think: sushi).
